During the week of April 27–30, the AR and US Canteens are participating in the nationwide initiative “Save the Potato! – Students Eat the Potatoes!” Through this campaign, Studierendenwerke (public student services organizations) across Germany are taking a stand against food waste and in favor of sustainable, locally sourced food.
The background to the campaign is this: In 2025, many regions had a particularly good potato harvest—which should have been good news. At the same time, however, the market and demand could not fully absorb the large quantities: Warehouses quickly filled up, prices came under pressure, and not all potatoes could be sold as food. As a result, surplus quantities are sometimes used for energy production or remain unsellable, even though they would generally be suitable for consumption. This is exactly where the “Save the Potato!” initiative comes in: The Studierendenwerke want to raise the profile of the potato as a food again, harness its potential as a food source, and take collective responsibility.
